(BNP) - Khuc cakes of Diem village is the name Vietnamese ancient script of Viem Xa hamlet, Hoa Long commune, Yen Phong district, Bac Ninh province. Those who have the opportunity to visit Diem village will not be able to forget the Khuc cake which is simplicity, hospitality Kinh Bac Rural Area.

Khuc cakes of Diem village has been generated since a very long time and is a traditional cake of important occasions such as holidays, festivals, full moon day so early day of the lunar month. Cake production is preserved to present days by handing down from father to son. The name of cake derived from the plant used to produce it is cudweed. The cakes are made entirely by hand. The process of production of a delicious cake requires a lot of effort and time. The meaning ingredients are good quality ordinary rice whose grains are white, long, and glutinous rice which is fragrant, flexible and cudweed leaves -  the main raw material.

The Khuc cakes of Diem village is filled by two types of fillers: onion filler and bean filler. The Khuc cake with bean filler are spiced with beans, fatty meat and peppers. The Khuc cake is filled with onion: the onions used as filler of Khuc cakes are dries onions, adding the earmite, pepper, coriander, chopped meat just mixed together. Unlike Khuc cakes of other villages, Khuc cakes of Diem villages are shaped like cat ears. It is unique and high spiritual valued.

The Khuc cake of Diem village is a famous specialty of Bac Ninh - Kinh Bac, gose deep into the subconscious of the people so far., only 5 households of the village regularly produce cakes for sale, mainly consumed in the village. If the proper care for this cake is not provided, risk of loss of this cake may occur. In order to the Khuc cakes of Diem village can follow the footsteps of visitors to all regions of the country, the main method is to propagate the villagers to participate in preserving the craft, paying attention to keep this tradition, ensuring food hygiene and safety in the production, preservation, and consumption stages.
