Khac Niem Vermicelli

(BNP) - Over hundreds of years, the profession of making vermicelli in Khac Niem ward, Bac Ninh city has become a traditional craft village. Initially, it was just a side job during leisure days, over time, the noodle profession gradually asserted its position, bringing income, creating jobs for the people here.

The rice vermicelli production is mainly concentrated in tow hamlets: Tien Trong hamlet and Tien Ngoai hamlet. Previously, vermicelli were produced by hand, through many stages, time consuming effort, productivity was not high (2/3 quintal/day), so people’s income was low. In order to expand business production, improve the productivity and quality on vermicelli, many households have invested in machines and improved of production technology. On average, a household can produce 4-5 quintals per day. Machine-made vermicelli is considered to be delicious, ensuring food hygiene, the noodles are more even, more flexible and delicious, and appealing to consumers.

Khac Nien vermicelli production village is developing with market’s demand day by day. To make quality products, the people of Khac Niem ward have made great efforts to choose rice without sticky, wet and without mixed with any kind of flour. The water to make vermicelli, clean and suitable for the climate with the cycle of the year’s time.

Environmental protection if craft village is also focused by the attention of authority agencies in Bac Ninh province, in 2019, the People’s Committee of Khac Niem commune cooperated with the Vietnam Scientific Institute of Water resurces to build the project of waste water treatment of rice vermicelli production craft village on the area of 2 thousand m2 with designed capacity of 400m3/day and night. So far, the project has been completed and put into use, contributing to solving the problem of water pollution, meet the increasing demand for production of people.

Improving product quality and expanding production scale in association with environmental protection is a right way to bring many benefits not only for the local people and economy but also for contribution to maintain and secure the sustainable development of a traditional craft village.
